Rabri: A Janmashtami Delight
Rabri is an ideal recipe for this Janmashtami. The most special part of this Indian sweets recipe is that its ingredients are very simple. This rabri recipe derives its subtle flavours from a food incense named kewra water. You just have to boil and reduce the milk to make rablri.
This rabri recipe can prove to be awesome for any occasion. Moreover Janmashtami is an event to be celebrated with some traditional Indian sweets recipe like rabri. All people will surely like and relish the taste of the rabri you prepare. The creamy texture of a rabri will give a melt in mouth experience. Give a treat to the taste buds of your loved ones with this recipe.

Serves: 4
Cooking Time: 1½ hours
Ingredients
- Milk- 3lts
- Sugar-2-3 cups
- Cardamom- 1tbsp (powder)
- Kewra Water- ½ tsp
- Limestone (chuna)- 2tsp
Procedure
- Take a deep bottomed frying pan and add the milk to it. Let it start boiling on a medium flame.
- Meanwhile take the limestone and mix it with half a cup of hot water. Start pouring this in small proportions into the milk.
- Now lower the flame of the gas oven and keep it on simmer.
- You have to keep removing the creamy layer of the milk as many times it is formed. Remove the creamy layer and keep it aside in a small bowl. This shall not be used in the rabri recipe later on.
- Reduce the milk to less than a quarter of its original proportion. You have to do the thickening on a low flame.
- When the milk gets thickened, add the sugar to it and stir well till it dissolves. Now add the kewra water and cardamom seeds powder to it. Keep stirring the ingredients in the pan for a minute or two.
- Now when the milk gets reduced, turn off the gas oven and bring it down. Let it cool down and then put it in the refrigerator for further cooling.
Garnish the rabri with some dry fruits if you want and serve it cold to your guests. Homemade Rabri (condensed milk sweet milk) will make Janmashtami all the more special for everyone in the family.
