Ingredients
- All purpose flour (maida)- 3 cups
- Ghee- ¼ cup
- Salt- a pinch
- Oil- for deep frying
For The Filling
- Dry dessicated coconut- ½ cup
- Almonds- ¼ cup (coarsely ground)
- Pistachios- ¼ cup (coarsely ground)
- Cashew nuts- ¼ cup (coarsely ground)
- Dates- a few (chopped)
- Raisins- ¼ cup
- Cardamom powder- ¼ tsp
Procedure
1. Mix the flour, ghee and salt together in a mixing bowl.
2. Add a little water and knead a smooth dough and keep it aside.
3. Mix all the ingredients of the filling together in a bowl.
4. Divide the dough into 10-15 equal parts.
5. Keep a small bowl filled with water by the side.
6. Dust a plain surface with flour and roll each portion of the dough like a poori.
7. Place a teaspoon full of filling mixture onto one half of the circle. Wet your fingers into the bowl of water and spread a little water around the edges of the circle.
8. Gently fold the circle into a semi circle, forming a half moon shape.
9. Seal the edges by pressing slightly, so that the dough sticks to each other making sure all the filling is still concealed inside.
10. Decorate the edges by twisting the dough portion carefully with fingers.
11. Continue the same procedure with the remaining dough and filling.
12. Heat oil in a deep bottomed pan and slowly place the gujiyas in it.
13. You can fry 4-5 gujiyas at a time.
14. Fry the gujiyas for 4-5 minutes on medium flame till they turn golden brown in colour on all the sides.
15. Once done, transfer the gujiyas to a plate and drain the excess oil in a napkin.
