Sweet Ariselu Recipe For Ugadi
Ugadi is just round the corner. You must have already started preparing for this lovely festival. Ugadi marks the beginning of a new year and a new beginning should always be celebrated with sweets. So, today we have a sweet recipe fo you to try on Ugadi.
Ariselu is a popular sweet recipe which is prepared on Ugadi in the states of Karnataka and Andhra Pradesh. This sweet dish is known by many other names such as the kajjaya, athirasam etc. in different parts of South India. This delicious sweet recipe is prepared with rice flour and jaggery. It is a deep fried sweet which also makes it crunchy and a favourite among the kids.

Serves: 4
Preparation time: 6 hours
Cooking time: 15 minutes
Ingredients
- Rice- 1kg
- Sesame seeds- ¼ cup
- Jaggery- ¾ kg (grated)
- Cardamom powder- ½ tsp
- Water- 1 cup
- Oil- for deep frying
Procedure
- Wash and soak the rice in water for about 5-6 hours.
- After that, drain the water from the rice and spread the rice on a thin cloth. Allow it to dry completely.
- After the rice dries up completely, grind it in a mixer into a fine powder.
- Heat a pan and add the jaggery to it.
- Add one cup of water to the jaggery and allow it to melt.
- Let the jaggery mixture boil on low flame till a thick syrup is formed. Keep stirring continuously.
- Now slowly add the rice powder and keep stirring to avoid lumps. Mix well and switch off the flame.
- Wear plastic gloves in your hand and make medium sized balls out of the mixture.
- Press it between your palms to give it a shape like poori.
- Now dab these pooris into sesame seeds. Coat both sides.
- Heat oil for deep frying in a pan and slowly place these pooris into the hot oil.
- Fry these pooris on low flame till they turn golden brown.
- Once done, transfer the pooris to a serving plate.
Ariselu is ready to be served. Enjoy this special sweet treat on Ugadi.
