Cranberry Pancakes To Start Your Day!
There is nothing more refreshing than the sight of luxurious breakfast. Pancakes recipes are usually considered very good for breakfast. They are quick and easy to prepare. If you want to make a healthy breakfast for your family, you can consider cranberry pancakes as an option. This pancake recipe is innovative and also delicious. Cranberry pancakes are marked by their red colour that attracts kids.
The best thing about cranberry pancakes is that apart from being a healthy breakfast, they can also be served as a dessert. You can make cranberry pancakes as a side dish too. This pancake recipe is the best thing to try in your morning rush hour but you can also enjoy it luxuriously on a lazy weekend.

Ingredients
- All purpose flour- 2 cups
- Milk- 1 cup
- Sugar- 1/2 cup (powdered)
- Fresh cranberries- 1 cup
- Eggs- 2
- Vanilla extract- 1tsp
- Nutmeg powder- 1/2tsp
- Baking powder- 1tsp
- Cornmeal- 1tsp
- Salt- 1 pinch
- Butter- 2tbsp
Procedure
1. Boil 2 cups of water in a bowl. When it bubbles, add cranberries to it. Boil the cranberries in water for about 5 minutes.
2. Meanwhile, whisk together all-purpose flour, eggs, milk and vanilla extract in another bowl. Mix it to a fine batter.
3. Add sugar, baking power, cornmeal, a pinch of salt and nutmeg powder to the batter.
4. Beat it again until it gains uniform consistency.
5. Pour the boiled cranberry pulp into the batter. Beat it softly and mix well.
6. Warm a blob of butter on a flat pan. When it melts completely pour a ladle full of batter into the pan.
7. Fry the pancakes lightly on both sides. It should take just about 2 minutes on each side if the flame is low.
