Sweet Potato and Onion Soup
Ingredients:
2tbsp Oil
¾ Kg. Sweet Potatoes, diced
1 Carrot, diced
2 Onions, sliced
2 Garlic cloves, crushed
2 ' Cups Vegetable stock
1 ¼ Cups Orange juice
1 Cup yogurt
2 tbsp Chopped Coriander leaves
Salt and Pepper to taste
To Garnish :
Chopped Coriander leaves
Orange rind
Method:
Heat the Oil in a large saucepan and add the Sweet Potatoes and Carrot, Sliced Onions and Garlic. Saut© gently for 5 minutes, stirring continuously.
Add the Vegetable stock and Orange juice and bring to a boil. Reduce the heat to a simmer, cover the saucepan, and cook the vegetables for 20 mts or until the Sweet Potato and Carrot cubes are tender.
Transfer the mixture to a food processor or blender in batches and process for 1mt until pureed. Return the puree to the saucepan. Stir in the Yogurt/Curds and Coriander leaves and season to taste. Serve the soup garnished with coriander and orange rind.
