Prawn Ghee Roast Recipe From Mangalore
Prawn ghee roast is a very typical Mangalorean dish. The original dish uses chicken instead of prawns. But eventually, the prawn ghee roast recipe became more popular than the actual recipe using chicken. This Indian prawn curry has a very distinct taste. It is certainly not one of the run of the mill, dishes you get to see every now and then.
Prawn ghee roast is also rather easy to prepare. In the authentic prawn ghee roast recipe, you would have to use large jumbo prawns. But you can make do with medium sized prawns as well if you don't find the bitter ones. Another important ingredient for this Mangalorean dish is pure desi ghee. It id best if you can use homemade ghee to get the excellent flavour of this dish right.

Ingredients
- Jumbo prawns- 12
- Lemon juice- 3 tbsp
- Salt- as per taste
- Turmeric- 1tbsp
- White pepper- 1tbsp
- Curd- 2 cups
- Red chillies- 20 (roasted)
- Coriander seeds- 1tsp
- Fenugreek seeds- 1 tsp
- Cumin seeds- 1tsp
- Garlic cloves- 10
- Tamarind pulp- 1 cup
- Ghee- 3tbsp
- Oil- 2tbsp
Procedure
- Marinate the prawns with salt, white pepper, turmeric and lemon juice.
- Leave the marinated prawns in the refrigerator overnight.
- Heat oil in a pan and shallow fry the marinated prawns in it for 3-4 minutes.
- Meanwhile, grind red chillies, coriander seeds, cumin seeds, frnugreek seeds, garlic and tamarind together into a thick paste.
- Remove the fried prawns from the pan and keep aside.
- The sauté the ground masala in the leftover oil in the pan for 3-5 minutes until the rawness is gone.
- Then add the prawns, the marinade and ghee to the pan.
- Add salt if necessary.
- Mix well, cover and cook on low flame for 10 minutes.
- You can serve prawn ghee roast garnished with chopped coriander leaves.
