Quick Indian White Chicken (Safed Murgh) Recipe

Safed murgh chicken in white gravy requires:

  • Chicken - 1/2 kg (cut into medium-sized pieces)
  • Onion - 4 (crushed)
  • Ginger-garlic paste - 1/2 tbsp
  • Green chillies - 3 (for medium spice)
  • Coriander leaves - a handful (finely chopped)
  • Black pepper powder - 1/2 tbsp
  • Cashews (soaked in lukewarm water) - a handful
  • Curds (whisked) - 3 tbsp
  • Oil/ghee - 2 tbsp
  • Salt (as per taste)
  • Fresh cream - 2 tsp

1. Wash the chicken pieces thoroughly. Rub with salt and keep aside for 10 minutes to ward off the odour.

2. In a heavy bottomed vessel, add oil and fry the crushed onions till they turn golden brown and leave the oil on all sides.

3. Add ginger-garlic paste and fry for the next 2-3 minutes. Saute with green chillies.

4. Next, season with black pepper powder and salt.

5. The chicken pieces need to be washed again to remove the extra salt. Now add them in the vessel and allow to cook till half done (approx. 15 mins).

6. Now add curds. Grind the cashews to a smooth fine paste and pour them next. Adjust salt.

7. Cook the chicken on low flame to absorb the spices well. Turn off the gas when done.

8. Pour it in the serving dish. Pipe some fresh cream and garnish with coriander leaves.
