Here below is the Biryani recipe for Malabar Chicken Biryani.

To make this tasty Malabar Chicken Biryani Indian dish, you will need.

  1. 1 kg of Rice
  2. 1kg tender chicken
  3. 4 tsp of a paste of green chillies, spices and peppercorn which can be ground together
  4. 2 tsp of ginger garlic paste
  5. 50gm of corriander leaves
  6. 500 ml of curd
  7. vegetable ( tomato, onion, peas if you want )
  8. 1 tsp of cummin seeds
  9. Spices ( 5 pieces of caramom, 2 cinnamon sticks and 2 bay leaves)
  10. 50 gms of ground cashew nuts and 50 gms of raisins
  11. 200 gm of ghee
  12. 500 ml of milk
  13. a pinch of saffron/ tumeric
  14. salt to taste
  15. water

Directions to make the Malabar Chicken Biryani

1.In a pan, heat the oil and add in the onions and the tomato and fry well, till you see the onions turning golden brown.

2.Now add in the ginger garlic paste, the curd, tumeric powder , corriander, biryani paste( contents in (3) above)

3.After a while when the contents in the pan are slightly cooked, add in the chicken pieces to the mixture.

4.While the rice is soaking in another utensil, heat another tava with ghee in it. Fry sliced onions, spices and the corriander.

5.To the contents in the ghee tava, add in the milk and bring to a boil, now drop in the rice and let it cook well.

6.After the rice is cooked, add in the contents which has the chicken pieces.

7.Let is cook together for about 10 to 15 minutes on a low heat flame.

8.After is it done, add in the cashews and the raisins and mix gently with a spoon. Spread a little ghee over the rice to give it a deep flavour.
