Barbecued Chicken With Mango Salsa
Weekend is the time to relax and cook some mouthwatering dishes which you normally cannot think of making during the busy week days. Barbecued chicken and similar dishes are on top of the most craved food list for the non vegetarian food lovers.
So, today we have a special recipe for you to try this weekend. Since mangoes are in season now, you can make use of the juicy fruit to make this lip-smacking salsa which can be paired with the amazing barbecued chicken.

Preparation time: 1 hour
Cooking time: 30 minutes
Ingredients
- Chicken breast fillets- 4 (100g) skinless, boneless
- Tandoori masala- 1tsp
- Salt- as per taste
- Freshly ground pepper- as per taste
- Olive oil- 1tbsp
- Garlic- 2 cloves (peeled and minced)
- Fresh ginger root- 1 (2cm) piece (minced)
- Mangoes- 2 (peeled, stone removed and diced)
- Vinegar- 2tbsp
- White wine- 1tsp
- Fresh coriander- 4tbsp (chopped)
Method
1. Preheat barbecue for high heat, and lightly oil cooking grate.
2. Rub chicken breast fillets with Tandoori Masala, salt and pepper. Let it marinate for an hour.
3. Cook on hot barbecue for 10 to 15 minutes on each side, until no longer pink and juices run clear. Remove from heat, set aside, and keep warm.
4. Heat oil in a medium frying pan over medium heat, and sauté garlic for about 1 minute.
5. Mix in ginger and mangoes, and cook 3 to 4 minutes, until mangoes are tender.
6. Pour in the cider vinegar and white wine. Season with salt and pepper.
7. Stir in coriander, and remove from heat.
8. Spoon over the barbecued chicken to serve.
