Thanksgiving Recipe: Easy Turkey & Egg Salad

Turkey salad is an easy Thanksgiving recipe that will become useful after the festive dinner. If you have chosen a particularly huge turkey or even otherwise, you are bound to have some leftovers from the turkey roast. The best way to utilise it is to make turkey salad which is a delicious leftover recipe. Not only is it an easy Thanksgiving recipe but a healthy turkey recipe too. You will be having vegetables (boiled and raw) in this healthy turkey recipe apart from the tasty roasted meat.

While preparing this easy Thanksgiving recipe you need to add some eggs and potatoes to make things interesting. The other ingredients are surely present in your kitchen because they are basic things you need for making any salad.

Turkey & Egg Salad: Thanksgiving Recipe
Ingredients For Turkey Salad:

1. Leftover roast turkey pieces (1 medium-sized bowl full)
2. Eggs-2 (boiled)
3. Potatoes-2 (boiled)
4. Baby onions-4 (sliced)
5. Onion greens-4 stalks
6. Mushrooms-4-5 (optional)
7. Bell peppers or capsicum-1 (cubed)
8. Coriander leaves or celery (chopped)
9. Mint a few stalks
10. Olive oil-1 tablespoon
11. Red vinegar or red wine-1 tablespoons
12. Mayonnaise or low fat yogurt-2 tablespoons
13. Ground white pepper (use black pepper if you don't have it)-1 teaspoon
14. Sugar-1 teaspoon
15. Salt as per taste

Procedure For Turkey Salad:

  • First of all boil the eggs and the potatoes. Peel them and slice them into round slices.
  • Mix the chopped vegetables with the boiled potatoes and eggs. Add the left over turkey pieces and stir it to mix well.
  • If you do not want to use mayonnaise then you have to beat yogurt for 5 minutes and mix it with the salad for as an low fat alternative.
  • Add salt and pepper to spice up the salad. Pour half the vinegar on it as salad dressing and beat the mixture. Now season by drizzling virgin olive oil on it.
  • Heat vinegar or red wine in a shallow pan; when it starts steaming add the sugar to it. Let the sugar get caramelised (become brown).
  • Saute the baby onions with the brown sugar for 1 minute and then pour the caramelised onions over the mixture.

Garnish your Turkey salad with celery and mint leaves before serving as a new dish for Thanksgiving 2011.
