Stuffed Vegetable Omlette Recipe – Easy Snack Recipe

A snack is something that most of desire, irrespective of time. However, this does not mean that we reach out for the chips packet or other tempting treats. Using a few vegetables in a regular omlette can give you a tasty, yet healthy snack. Take a look at this healthy omlette recipe.

Stuffed Vegetable Omlette Recipe –

Ingredients:

  • 3 Eggs
  • 2 tablespoons – Olive Oil
  • Finely chopped parsley

For Stuffing:

  • 1 tablespoons – Olive Oil
  • 8-10 cloves of garlic, finely chopped
  • 1 Inch Ginger, finely chopped
  • 2 Spring onions finely chopped
  • Green, yellow and red capsicum – All cut into thin strips
  • A small bowl of Green Gram Sprouts (optional)
  • Salt and pepper to taste

Method Of Preparing Stuffed Vegetable Omlette:

  • Heat olive oil in a pan and stir fry all the vegetables including garlic and ginger.
  • Add salt to taste and cook again for a few minutes. Keep aside the cooked mixture
  • Whisk the eggs with some salt and pepper.
  • Heat little more oil in a pan and pour a little egg mixture. Make sure the egg mixture spreads evenly across the whole pan.
  • Cook the omlette till the lower-side is done. Once the edges begin to loosen take out the omlette from the pan and place it on a chopping board.
  • Put a little mixture on one side of the omlette and roll the omlette. If you wish you can cook again for a couple of minutes.
  • Finish off preparing the other stuffed vegetable omlettes in a similar way.
  • Cut the stuffed vegetable omlette, sprinkle some chopped parsley and serve hot.

Note: You can store some of the vegetables in the refrigerator and use it again, while preparing your healthy omlette recipe for an easy snack. This stuffed vegetable omlette recipe is a great source of proteins and vitamins.
