Chinese Tomato Egg Rice Recipe
We all know that eggs are extremely beneficial for health. Not only it increases our overall health but is also good for our skin and hair. It is often recommended to have boiled eggs as they have more calcium content. At the same time having boiled egg every day can be really boring. However, having eggs with different variety of dishes is something that is popularly followed as just plain eggs are not liked by many, especially kids.
Tomatoes when combined with eggs can bring up a wholeheartedly relished dish. Chinese tomato egg rice is one such dish that promises to be healthy and at the same time is extremely easy to prepare. It is a spicy recipe that can be relished for anytime of the day be it breakfast, lunch or dinner.

Preparation Time: 10 minutes
Ingredients
Medium tomatoes- 2 (chopped)
Tomato ketchup- 4tbsp
Eggs- 4 (boiled, peeled and cut into small pieces)
Basmati rice- 3 cups (cooked)
Oil- 3tbsp
Garlic- 2tbsp (chopped)
Spring onion bulbs- 4 (chopped)
Salt - to taste
White pepper powder- 1/2tsp
Spring onion greens- 5 stalks (chopped)
Soy sauce - 2tbsp
Cornflour/ corn starch - 2tbsp
Vinegar- 4tbsp
Fresh coriander- 5
Procedure
1. Heat some oil in a non-sticky pan, add garlic and saute till it turns golden brown.
2. Add spring onion bulbs and saute it well.
3. Now add rice, salt and a little pepper powder and toss it well.
4. Cook for a minute and then add the egg pieces to the rice and mix well.
5. Meanwhile, mix cornstarch with little water along with 1tsp vinegar. Add it into the pan and stir till it looks cooked.
6. Take another pan and add 2 cups of water, bring it to boil.
7. Once it starts boiling, add the chopped tomatoes and tomato ketchup.
8. Sprinkle salt, soy sauce and pepper powder as per taste. Add it to the rice pan.
9. Add 2tbsp vinegar and mix well. Cook for another 2 minutes.
10. Put the pan off flame.
The Chinese tomato egg rice is ready to eat. Place rice on serving dish and pour tomato egg drop sauce on top. Garnish with coriander sprig and serve it hot.
