Quick And Easy Vegan Mushroom Noodles Recipe
Even though homemade soup is always on demand no matter what the occasion or season is, and without a doubt one of the easiest and most comforting dishes out there, but we cannot eliminate noodles from the list entirely!
Just like soup, noodles are too easy to make when you have fresh ingredients at home and a simple recipe to follow. You can either prepare the noodles from scratch or use a readymade one. The trick is to keep a jar of homemade veg broth handy for the recipe and it will make all the difference.

Vegetable/olive oil
200g chestnut mushrooms Brushed of all dirt, but not washed; halved
2tbsp runny honey
1tsp finely chopped garlic
1tsp peeled and grated ginger
0.5 tsp sriracha
1 tbsp lime juice
1tbsp soy sauce
85g noodles made from buckwheat flour (boiled)
100g fresh spinach
soy roasted seeds
salt, pepper to taste

1. Preheat the oven at 180 degree celsius
2. Lightly oil the baking sheet and keep it aside
3. Add mushrooms to it, and bake for 25 mins
4. While they are cooking, mix together honey, garlic, ginger, sriracha, lime juice and soy sauce in a bowl to make dressing
5. Reheat the noodles by soaking them in boiling water in the last 5 mins of mushroom baking time.
6. Drain the noodles and add to the dressing bowl and mix again.
7. Pile the noodles into a serving bowl and top with the mushrooms and soy-roasted seeds.
