Lauki Burfi Recipe | Ghiya Barfi Recipe | Bottle Gourd Burfi Recipe
Lauki burfi is a traditional North Indian sweet that is prepared during the festive seasons for fasts. Here is a video recipe and step-by-step procedure with images.
Lauki burfi is a popular North Indian sweet that is traditionally prepared as a phalahari during vrat and festivals. The ghiya barfi is made by cooking grated lauki, milk and khoya with sugar. Once it thickens, it is set on a plate and allowed to cool to form the burfi.
The lauki as a vegetable has great health benefits and is good for digestion. It is rich in dietery fibre and hence this sweet has great nutritious values as well.
The lauki ki burfi is a simple recipe to make and does not take too much of your effort. The addition of dry fruits in the burfi enhances the flavour of the sweet. The lauki burfi is mainly prepared during fasts and vrats.

LAUKI BURFI VIDEO RECIPE

Serves: 8-10 pieces

Milk - 1/2 litre
Lauki - 1/2 (150 g)
Khoya - 1 cup
Mixed dry fruits (chopped) - 3 tsp
Sugar - 4 tbsp
Ghee - for greasing

1. Take lauki and cut it into half.
2. Peel the skin and grate the lauki piece.
3. Add milk in a heated pan.
4. Add the grated lauki.
5. Stir continuously to avoid burning at the bottom.
6. Allow it to cook for 5 minutes on medium flame.
7. Add khoya and mix well.
8. Allow it to cook for 4-5 minutes.
9. Add the mixed dry fruits and sugar.
10. Stir continuously and allow it to cook for 15 minutes.
11. Remove it from the stove, once it thickens and becomes tight.
12. Grease a plate with ghee.
13. Add the mixture on the greased plate.
14. Dab a little to flatten it.
15. Allow it to cool for about 2 hours until it sets.
16. Cut it into vertical strips.
17. Then cut it into horizontal strips for it to become square pieces.
18. Serve.
- 1. You can add consensed milk instead of the khoya., in which case the quantity of sugar must be altered.

STEP BY STEP - HOW TO MAKE LAUKI BURFI
1. Take lauki and cut it into half.
