Kaju Halwa Recipe: How To Prepare Cashew Halwa

Kaju halwa is a traditional North Indian sweet that is prepared during festive seasons. During Ashtami of Navratri, kaju ka halwa is offered to the Goddess as naivedyam and distributed to all.
Cashew halwa is a popular sweet and is prepared by cooking powdered cashew nuts and atta in a sugar syrup. The nutty flavour of the cashew nuts, along with a few strands of saffron, make this sweet toothsome and very tempting. The kaju halwa melts in your mouth, when taken a bite at and elevates your taste buds.
Kaju halwa is very simple to prepare and does not take too much of your kitchen time during celebrations and festivals. Here is an authentic, yet simple, recipe to prepare kaju halwa at home. Watch the video and also follow the step-by-step procedure with images.
KAJU HALWA VIDEO RECIPE

Cashew nuts (kaju) - 1 cup
Atta - ½ cup
Water - 3½ cups
Ghee - ½ cup
Sugar - 1 cup
Saffron strands - 3-4
Cardamom powder - ¼th tsp
Almonds (chopped) - ¼th tsp

1. Add cashew nuts in a mixer jar.
2. Grind it into a fine powder and keep it aside.
3. Add water in a heated pan.
4. Allow it to boil for 2-3 minutes on high flame.
5. Add sugar and mix well.
6. Allow it to dissolve and boil for 2-3 minutes on a high flame.
7. Add saffron strands and allow it to boil for another minute.
8. Remove the pan from the stove.
9. Add ghee in a heated heavy-bottomed pan.
10. Allow it to melt and heat well.
11. Add atta and the powdered cashew nuts.
12. Stir continuously to avoid it from burning.
13. Allow it to cook for 5-6 minutes on a medium flame, until the mixture turns brown.
14. Once done, add the sugar syrup and mix well.
15. Stir continuously for 4-5 minutes until the mixture thickens and starts to leave the sides of the pan.
16. Add cardamom powder and chopped almonds.
17. Mix well and transfer into a bowl.
18. Serve hot or chilled.
- 1. The atta and cashew nut powder must be roasted until the raw smell goes away.
- 2. While stirring continuously, make sure there are no lumps formed in the mixture and cook until the mixture starts to leave the sides of the pan and collects in the centre.
- 3. The ghee must separate from the mixture and then the halwa is ready.

STEP BY STEP - HOW TO MAKE KAJU HALWA
1. Add cashew nuts in a mixer jar.
