Easy And Healthy Green Pasta With Nuts Recipe
Who doesn't like a warm bowl of pasta? This green pasta is a delicious way to get your greens in which is possible with an array of green veggies. Also a handful of walnuts, which is a top contributor of healthy fat, takes this dish to a whole new level. You can meal prep a batch or make it for an easy weeknight dinner.
In this recipe we use parts of food that we (otherwise) throw away. From broccoli stalk to spinach stems, this wholesome food will satisfy your taste buds to the fullest. If you love to have something healthy, light and less oily, then this Green Pasta with nuts recipe is a must try.

- 1tbsp olive oil
- 1garlic clove (chopped)
- 1 lemon juice
- 1 Broccoli head (along with softer portion of the upper stalk)
- 80g Green Peas
- Greens-Kale/spinach
- 1tbsp lemon juice
- Mint, basil (including stem)
- 2tbsp Parmesan cheese. (Use vegan cheese if preferred)
- Toasted Walnuts/Hazelnuts
- 200g Penne pasta (wheat)
- Salt, pepper to taste
- Other colourful veggies to garnish

- In a saucepan of boiling water, slowly add in drops of oil followed by pasta. Let the pasta cook for 10-15min. In a pressure cooker, cook greens, broccoli, peas for 2-3 whistles until soft.
- Transfer the green contents from cooker to food processor. Wait for it to come to room temperature before adding chopped garlic, cheese, herbs and lemon juice.
- If you like it smooth, add a little pasta water. Churn until a smooth paste. Add salt and pepper as per taste.
- Once pasta is cooked, transfer the pasta in vessel with olive oil, transfer the green sauce and allow it to cook.
- Add toasted hazelnuts/ and little cheese and fold
- Garnish with colourful veggies of your choice. (PS: I used kale and purple cabbage here)
This pasta is extremely delicious and completely healthy and the best part is It contains all greens/veggies- your kids will otherwise say no to. If you love non-veg then you can add chicken breast in it as well.
