Easter 2025 : A Heartwarming South Indian Recipe To Close The Lenten Season
There's a quiet rhythm that sets in during the Lenten season, something you start to feel before you even mark it on the calendar. Meals grow simpler, days a little more intentional. Some give up meat, others their favorite snacks, and many take a step back from distractions to focus inward. Whether it's forty days or fifty, depending on one's tradition, Lent is a time of pause of preparing the heart.
As the days pass, the body adjusts to the abstinence, but it's the soul that does the real work - reflecting, resetting, reconnecting. And just when the wait starts to feel long, Passion Week arrives like a deep breath before the joy. Maundy Thursday, Good Friday, and the hushed anticipation of Holy Saturday build up to something bright, something deeply hopeful - Easter Sunday.
The early morning Mass, the joyful hymns, the fresh clothes, everything feels lighter. And after weeks of discipline, the moment finally comes: the fast is over. In many homes, people reach for Easter eggs, symbols of new life. But in many South Indian households like mine, we turn to something that tastes like tradition - palappam and egg roast.
That first bite hits differently after nearly seven weeks without meat. The delicate lace-edged appam, with its soft center, is the perfect match for the rich, spicy egg roast that's been simmering in the kitchen since morning. It's not just delicious, it's comforting. It's familiar. It's home.
Palappam (Laced Rice Pancakes)
Ingredients
- 2 cups raw rice (pachari)
- 1/2 cup cooked rice
- 1/2 tsp dry yeast
- 2 tbsp sugar
- Salt to taste
- 1/2 cup thick coconut milk
- Water as needed
How To Prepare
- Soak raw rice for 4-5 hours. Drain and grind with cooked rice, adding enough water to make a smooth batter.
- Dissolve yeast and sugar in warm water. Let sit for 10-15 minutes until frothy.
- Add this mixture and coconut milk to the batter. Mix and allow to ferment overnight or at least 8 hours.
- Once risen, stir in salt. The batter should be pourable, thinner than dosa batter.
- Heat an appachatti (appam pan). Pour a ladle of batter, swirl gently to form a circle, cover, and cook for 1-2 minutes until edges crisp up.
- Serve hot with egg roast.

Egg Roast (Spicy Kerala-Style Egg Curry)
Ingredients
- 4-6 boiled eggs
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2-3 green chilies, slit
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- A handful of curry leaves
- Coconut oil
- Salt to taste
How To Prepare
- Heat coconut oil in a pan. Add curry leaves and onions, sauté until golden and soft.
- Add ginger-garlic paste and green chilies. Sauté until the raw smell fades.
- Stir in turmeric, chili, and coriander powders. Once roasted, add tomatoes and cook until soft and oil starts to separate.
- Make shallow cuts in the eggs and add them to the masala. Coat well and let them simmer for a few minutes.
- Garnish with garam masala and a few extra curry leaves. Serve hot.
Easter isn't just about breaking a fast or celebrating with a special meal, it's about remembering something deeper; that hope always follows struggle, and life always finds a way to begin again.
During Lent, we give things up. We let go of comfort, routine, or even parts of ourselves that no longer serve us. These are like little deaths - quiet endings we choose or go through. But on the other side, there's always something waiting: peace, strength, healing, or a deeper connection to our faith and to each other.
That's what Easter reminds us of, that even after the hardest days, something beautiful can rise. It might not happen all at once, but it comes. Light after darkness. Joy after silence. Life after every little loss.
