Garlic tossed spinach-filled cottage cheese cannelloni is a unique pasta recipe shared by Chef Anirudh Nautiyal. Cannelloni is basically a cylindrical type of pasta generally served or baked with a filling and covered by a sauce.
It is a famous Italian cuisine recipe. It needs to be boiled beforehand. People who swear by pasta would definitely love this recipe. We are sure it's worth trying. It has a yummy filling of garlic tossed spinach and cottage cheese.
So, have a look at the ingredients and procedure to follow below.

Cannelloni
Cottage cheese - 100 g
Spinach (blanched) - 1½ cups
Garlic - 2 tbsp
Onion - ½ cup
Nutmeg powder - 1 tsp
Salt to taste
Pepper - 2 tsp
Olive oil - 2 tbsp
Lentil sauce:
Yellow lentil - 1 cup
Onion - ½ cup
Garlic - 2 tbsp
Salt to taste
Olive oil - 1 tbsp

- Take a deep utensil and fill it with some water to soak the lentil before cooking.
- Soak the lentil for 30 minutes before cooking it, so that it can be cooked properly.
- Now, keep the lentil for cooking and once done, cover it and keep it aside for sometime.
- Post that, take a blender and make a fine puree of it and keep it aside, as we will use this puree later on.
- Now, take a frying pan and use some non-sticky spray for cooking.
- Chop the onion and garlic well, as we have to sauté both.
- Now, put the chopped onion and garlic in the pan and sauté them.
- Take blanched and chopped spinach and add both of these - season it and keep it separate.
- Now add lentil puree, which we prepared previously, to the sauté the onion and garlic - adjust seasoning and keep it aside.
- Now, take out the cottage cheese and cut thin slices of it and sear it on a hot plate.
- Add spinach mixture to it and then make a roll of it like cannelloni.
- Now, arrange this on a plate and then pour the lentil sauce on top.
- Make sure that the platter is well managed and garnished.
- You can now relish your piping hot dish.
- 1. We use the non-sticky spray because you will be able to use the oil in the quantity, which is actually needed for cooking. It is healthy and saves money as well.
