Chakli Recipe: How To Make Karnataka-style Chakkuli

Chakli is an authentic South Indian snack that is mainly prepared during the festive seasons and is also offered as naivedyum to God. Here is a detailed preparation method with images and a video.

Chakli is a traditional South Indian snack that is prepared for most of the festivals including Diwali, Janmashtami, Ganesh Chathurthi etc. This Karnataka-style chakkuli is prepared by making a soft dough with the chakli powder and some dry spices and frying the concentric spiral moulded dough.

Also known as chakralu or janti kalu, this snack is a typical grandma's recipe. During olden times, grandmas used to prepare chakli in big tins and store it for almost a month. It is an ideal evening snack with tea or masala milk.

The traditional chakli is tricky and time consuming as the chakli powder itself takes days to be made. However, now the chakli powder is available ready-made, hence, making the procedure a lot easier. The only tricky part is to get the consistency of the dough right.

Ingredients
  • Chakli powder - ¾th bowl

    Salt to taste

    Hing (asafoetida) - ¼th tsp

    Jeera - 1 tsp

    Oil - ½ cup + for frying

    Water - ½ cup

    Chakli maker

    Silver foil

How to Prepare
  • 1. Add the chakli powder into the mixing bowl.

    2. Add salt and hing.

    3. Then add jeera and mix it well.

    4. Meanwhile add quarter cup of oil to a heated pan.

    5. Heat the oil for a minute until it turns hot.

    6. Pour the hot oil in the mixing bowl.

    7. Mix well.

    8. Add water little by little and knead it into a soft and moist dough.

    9. Then grease the chakli maker with oil.

    10. Take a large portion of the dough and place it into the chakli maker.

    11. Cover it with the lid and bring it above the silver foil.

    12. Apply pressure and move the maker in concentric circles.

    13. Make small spiral chaklis on the foil.

    14. Meanwhile, heat oil in a pan for frying.

    15. Carefully peel the chakli off the foil and drop them in the oil, one after the other.

    16. Fry them on medium flame till they turn light brown.

    17. Gently flip them over and fry on the other side.

    18. Remove from the stove and serve once it cools down.

Instructions
  • 1. You can add sesame seeds, according to your preference.
  • 2. If you like it spicy, you can add red chilli powder to the dough.
  • 3. If the chakli breaks while making, it means that the dough is too dry. In that case, you can add water and knead it again for a few minutes.
