Begun bhaja is a popular Bengali side dish that is commonly prepared in every household. Here is a video recipe. Read the step-by-step procedure with images.
Begun bhaja is a traditional Bengali-style recipe that is prepared as a side dish in every household. The Bengali begun bhaja is prepared by smearing turmeric powder, salt and red chilli powder on the large eggplant pieces, which are later deep-fried.
The baingan fry is crunchy and soft; and though the spices added are minimal, it has a good burst of flavours. Begun bhaja is traditionally prepared with mustard oil, which has a strong pungent smell and gives a unique taste to the dish. However, if you don't like the taste of mustard oil, you can prepare it with regular cooking oil.
Begun bhaja is a simple yet appetizing side dish and is extremely easy to prepare at home. Here is a video followed by a detailed step-by-step procedure with images on how to make the traditional begun bhaja recipe.

Begun (Eggplant) - 1
Salt - 1 tbsp
Turmeric powder - 1 tbsp
Red chilli powder - ½ tbsp
Mustard oil - for frying

1. Cut the begun (eggplant) into thick circular pieces.
2. Transfer into a bowl.
3. Add salt.
4. Then, add turmeric powder and red chilli powder.
5. Mix well and make sure the spices are smeared well on all the begun pieces.
6. Heat mustard oil in a pan for frying.
7. Once it is smoking hot, add the begun pieces one after the other in the oil.
8. Fry on one side and then flip them over to cook on the other side.
9. Fry until they turn brown on both sides.
10. Remove from the pan and serve hot.
- 1. The mustard oil must be smoking hot before frying.
- 2. Though traditionally this dish is deep-fried, you can also shallow fry or oven grill the eggplant pieces.
- 3. If you like the eggplants to be more crispy, smear a little rice flour on it.

STEP BY STEP - HOW TO MAKE BEGUN BHAJA
