Begun bhaja is a traditional Bengali-style recipe that is prepared as a side dish in every household. The Bengali begun bhaja is prepared by smearing turmeric powder, salt and red chilli powder on the large eggplant pieces, which are later deep-fried.
The baingan fry is crunchy and soft; and though the spices added are minimal, it has a good burst of flavours. Begun bhaja is traditionally prepared with mustard oil, which has a strong pungent smell and gives a unique taste to the dish.
