1. Berry Overnight Oats
Ingredients
1/2 cup rolled oats
1/2 cup milk (dairy or non-dairy)
1/2 cup mixed berries (strawberries, blueberries, raspberries)
1 tablespoon honey or maple syrup
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
How To Prepare
1. In a mason jar or airtight container, combine oats, milk, berries, honey or maple syrup, chia seeds, and vanilla extract.
2. Stir well to combine all ingredients.
3. Cover and refrigerate overnight.
4. In the morning, stir the mixture and add more milk if desired. Enjoy cold or heated in the microwave.
2. Peanut Butter Banana Chia Seed Pudding
Ingredients
2 ripe bananas, mashed
1/4 cup peanut butter
1 cup milk (dairy or non-dairy)
1/4 cup chia seeds
1 tablespoon honey or maple syrup
1/2 teaspoon cinnamon
How To Prepare
1. In a bowl, combine mashed bananas, peanut butter, milk, chia seeds, honey or maple syrup, and cinnamon.

Ingredients
1/2 cup quinoa, rinsed
1 cup milk (dairy or non-dairy)
1 apple, grated

How To Prepare
1. In a saucepan, combine quinoa and milk. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked and most of the milk is absorbed.
