Spinach Gnocchi with Saffron Creamy Sauce
Ingredients:
1tbsp Butter
1tsp Garlic, Chopped
"' Capsicum, Chopped
"' Red Capsicum, Chopped
"' Yellow Capsicum, Chopped
1 Tomato, Chopped
1-Cup Cream
2tsp Saffron in Milk
6 - 7 Black Olives
For the Gnocchi :
4tbsp Potatoes, boiled and mashed
1tsp Spinach puree
3tbsp Suji/Semolina
1tsp Maida/Flour
A pinch of Salt
1tsp Oil
Method:
Mix all the ingredients for the Gnocchi to form a dough. Make a long roll and cut out into 1" pieces. Boil water in a vessel with Salt and Salt. Take each piece at a time on the forefinger.
Take a fork and dip it in the flour and press the fork on the dough to flatten it and put it in boiling water. Let it cook for 6minutes. Strain and keep aside.
Heat Butter in a pan, add Garlic, the 3 types of Capsicums and Tomatoes and saute for 2 minutes. Add the Gnocchi and Salt and toss. Add the Cream, Saffron Milk and Olives and toss again and serve.
