Lauki and Mangodi Sabji
INGREDIENTS :
10 Mangodi
2 Onions
1 tsp. Jeera (Cumin Seeds)
3 tbsp Oil
1 Cup Tomato Puree
1 tsp. Turmeric Powder
1 tsp. Dhania (Coriander) Powder
1 tsp. Chili Powder
e Lauki (Bottle Gourd), peeled and chopped
e Cup Coriander Leaves
Salt to taste
For Mangodi :
e Kg Green gram dal
2 inches Ginger piece
7 - 8 Green Chilies
e tsp Hing (Asafoetida)
METHOD :
To make Mangodi's:
Soak Green gram dal overnight. Next day drain it and grind with Ginger, Chilies and Hing to a paste. Grease a polythene sheet and pour a spoonful of the paste all over the sheet and let it dry in the sun for a day or two. Store them in airtight jars.
Heat Oil, add Jeera, Onions and fry till it becomes brown. Add Turmeric powder and Dhania powder and mix well. Next add Chili powder and broken Mangodi. Add some water. Add the Lauki pieces and mix well. Add water and Salt and cook until the Lauki and Mangodi are cooked. Next add the Tomato puree and chopped Coriander leaves and mix well. Cook for 5 minutes.
Remove to a serving bowl and serve hot with Rice.
