Alu Matar Gobi Masala
Ingredients:
250gms Potatoes, Diced
250gms Peas, Shelled
250gms Cauliflower, Florets
2 tsp Chili Powder
2 tsp Garam Masala
2 Cinnamon Sticks
4 Cloves
2 tsp Aniseed/Fennel Seeds
2 Cups Tomato Puree
4 tsp Coriander leaves, Chopped
4 tbsp Oil
Salt to taste
For the Masala :
2 medium sized Onions
1 inch piece Ginger
3 - 4 Pods Garlic
1 tsp Jeera (Cumin Seeds)
1 tsp Dhania (Coriander Seeds)
1 tbsp Cashew nuts pieces
2 - 3 Green Chilies
Method:
Grind the ingredients for the masala to a paste.
Heat Oil in a kadai(wok) and add Cinnamon, Cloves and Aniseed.
When they start to splutter, add the masala paste and fry for 2 minutes. Next add Tomato Puree and bhunno(stir-fry) until the moisture evaporates.
Add the vegetables, Chili powder, Salt and 3 Cups of Water, stir.
Close with a lid and cook for 6 to 8 minutes or until the vegetables become tender. Add Garam Masala and mix well.
Remove to a serving bowl and garnish with Coriander leaves and serve hot with your choice of Indian Bread.
