Shahi Mushroom Biryani Recipe
Biryani is one of the most favorite dish in our household. Although it's usually chicken or mutton biryani, this time I made a vegetarian version. Mushroom are known for the texture that is very meaty. So replacing chicken with mushroom did not made much difference. Biryani turned out very flavorful and delicious. Very comparable to it's non vegetarian avatar. This mushroom biryani is sure to delight everyone in your family including your kids.
The taste of the juicy mushrooms and the fragrance of spices used to make biryani is a complete treat for the senses. So, it is time to dig into this yummy vegetarian biryani recipe and get lost in it's marvellous flavour.

So here is the recipe.
For rice
- Basmati rice- 2 cups
- Ghee- 2tbsp
- Cloves- 3-4
- Black cardamom- 1
- Black pepper- 3-4
- Salt to taste
For the mushroom masala
- Oil- 2tbsp
- Cloves- 2
- Black pepper- 3-4
- Black cardamom- 2
- Cinnamon stick- 1 inch piece
- Onion- 1 cup (sliced)
- Green chili- 2 (slit into half)
- Ginger garlic paste- 1tsp
- Coriander powder- 2tsp
- Red chili powder- ½ tsp
- Salt to taste
- Turmeric powder- ½ tsp
- Mushroom- 200 gm
- Fresh coriander- 2tbsp ( chopped )
For garnishing
- Onion- ½ cup
- Cashew nuts- 5-6
- Saffron- a pinch soaked in 1tbsp milk
- Coriander leaves- 1tsp (chopped)
For the rice
- Wash the rice.
- Add ghee in a pan.
- Add cloves, black cardamom and black pepper.
- Fry for a minute.
- Add the rice, 4 cups of water and salt.
- Cook till the rice is 3\4 th done.
- Remove the pan from heat and keep aside.
For the mushroom masala
- Wash and cut mushrooms into pieces.
- Heat oil in a pan.
- Add cloves, black pepper, black pepper and cinnamon stick.
- Cook for 30 seconds.
- Add onions and green chili.
- Fry till onions are browned.
- Add ginger garlic paste and fry for 2-3 minutes till the raw smell is gone.
- Add coriander powder, red chili powder, salt and turmeric powder.
- Fry for 2-3 minutes.
- Add a tbsp of water if required.
- Add mushrooms and cover the pan and cook till they are done.
- Remove the cover and fry the mushroom till all the water has reduced.
- Add fresh coriander.
For the garnishing
- Fry onions till browned.
- Fry cashew nuts till browned.
Assembly
- In a pan add a layer of 1\3 rd of rice.
- Top it with half of the mushroom masala.
- Cover with another 1\3 rd of rice.
- Top it with remaining mushroom masala.
- Finally top the masala with the remaining rice.
- Cook on very low heat for 8-10 minutes.
- Check if the rice is done.
- Sprinkle fried onions, cashew nuts, saffron milk and coriander on top.
- Serve hot.
