Palak or Spinach, as the famous cartoon character Popeye says, is a rich source of vitamins and Iron and if your kids are Popeye fans then tasty spinach foods would definitely be their favorites. So try making some mouth watering palak rice. Take a look and try the delicious “Palak Rice Recipe" at home, also share the simple rice recipe with those who are looking for lunch box recipe options.
Palak Rice Recipe – Simple Rice Recipe For Lunch Box
Ingredients:
- 2 cups boiled rice
- 1 cup palak (finely chopped)
- 1 big onion (chopped)
- 3-4 green chilies
- 1/2 tej patta
- kali mirchi
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 cup cashews
- 1 clove
- salt
- 2 tbsp oil
- 1 lemon
Preparation:
- In a pan, heat oil and add mustard seeds, cumin seeds, chilies, chopped onion and fry for a few minutes. Then add chopped palak and fry for some more time.
- Add 1/2 cup water and bake in simmer until all the water evoporates.
- Grind clove, tej patta and cashews into paste and fry in oil in a separate pan.
- Add the fried mixture to palak mixture and stir well. Leave aside to cool.
- Mix rice with palak masala. Tasty palak rice is ready to serve.
Enjoy the spicy palak rice with tangy raita.
