Palak or Spinach, as the famous cartoon character Popeye says, is a rich source of vitamins and Iron and if your kids are Popeye fans then tasty spinach foods would definitely be their favorites. Palak Rice Recipe – Simple Rice Recipe For Lunch Box
Ingredients:
- 2 cups boiled rice
- 1 cup palak (finely chopped)
- 1 big onion (chopped)
- 3-4 green chilies
- 1/2 tej patta
- kali mirchi
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 cup cashews
- 1 clove
- salt
- 2 tbsp oil
- 1 lemon
Preparation:
- In a pan, heat oil and add mustard seeds, cumin seeds, chilies, chopped onion and fry for a few minutes. Then add chopped palak and fry for some more time.
- Add 1/2 cup water and bake in simmer until all the water evoporates.
- Grind clove, tej patta and cashews into paste and fry in oil in a separate pan.
- Add the fried mixture to palak mixture and stir well. Leave aside to cool.
- Mix rice with palak masala. Tasty palak rice is ready to serve.
Enjoy the spicy palak rice with tangy raita.
