Mushroom Chilli Noodles: A Quick Treat
Sometimes our family gets tired of home-cooked food and yearns to eat out. But keeping their health in mind you can always give them something different and delicious at home. Noodle recipes are handy for such occasions. Mushroom chilli noodles is the perfect way to treat your family to a restaurant-like meal.
Mushroom noodles are liked by kids and adults alike. Kids just love any kind of noodles recipe because its a craze. And for adults, mushroom chilli noodles offers a healthy option apart from taste. Mushrooms in this noodle recipe are very healthy. If you are a vegetarian then mushroom noodles is one the best Chinese style recipes that you can try at home.

Serves- 4
Preparation Time: 10 minutes
Cooking Time: 20 minutes.
Ingredients
- Hakka noodles- 2 packets (400 grams)
- Mushrooms- 10 (cut into halves) + 2 (chopped)
- Onion- 1 (sliced)
- Onion greens- 1 cup (chopped)
- Garlic- 10 pods (minced)
- Ginger- 1/2 inch (grated)
- Red bell pepper- 1 (chopped)
- Green bell pepper (capsicum)- 1 (chopped)
- Green chillies- 4 (slit)
- Soy Sauce- 1tbsp
- Vinegar- 1tbsp
- Olive oil- 1tbsp
- Butter- 1tbsp
- Pepper- 1tbsp
- Salt- as per taste
Procedure
1. Boil the noodles separately in a pot of boiling water for about 10 minutes. Add a bit of oil to the pot and stir it occasionally so that the noodles don't form lumps.
2. Drain away the water and keep the boiled noodles aside.
3. Place a pan over a medium flame. Melt the butter in the pan and add the chopped mushrooms to it.
4. Let it get sauteed for 2 minutes. Then add vinegar and soy sauce to the pan. Cook on a low flame for another 2 minutes. Then add 2 cups of water; cover and cook for about 10 minutes on a medium flame.
5. Place another deep bottomed pan on the gas oven. Heat olive oil in it.
6. Saute the halved mushrooms in the pan for few minutes. Then strain them and keep them aside.
7. Season the leftover oil with the green chillies and then saute onions in it.
8. When the onions turn brown, add garlic, ginger, bell peppers and onion greens to the pan.
9. Cook on low flame for another 2 minutes. Add the boiled noodles to the pan. Mix well and fry the noodles for 3-4 minutes.
10. By now, the mushroom sauce cooking in the other pan must be ready. Pour the simmering sauce on the noodles.
11. Add the fried mushrooms and salt. Stir well and cook for a minutes on a low flame.
Your mushroom chilli noodles are ready to be served. You can also enjoy it with any Chinese side dish.
