Sunday Special: Whole Wheat Bread Rolls with Herbs
It's a weekend morning and after a week of hectic schedule and bad food timings, here is finally the opportunity to cook some awesome food and spend a great time with family.
Now that I was awake, decided to knead the dough for the breakfast bread and by the time my husband was ready to wake up, these rolls were out of the oven. Warm rolls slathered with butter or cheese spread is heaven. The rolls came out delicious. Soft and chewy with all the flavours of the herbs.
To make them a little healthy as well, I replaced half of the all purpose flour with whole wheat flour. Kneading is the key to make good bread. So don't compromise on the kneading part. Knead till the dough is soft and elastic. If you have a stand mixer, use it on medium speed to knead your dough. So, here is the recipe.
Ingredients
- Yeast- 2 and ¼ tsp
- Warm water- 1 cup
- Warm milk- 1/3 cup
- Olive oil- 1/4 cup
- Dried thyme- ½ tsp
- Dried basil- ½ tsp
- Dried oregano- ½ tsp
- Chilli flakes- 1tsp
- Salt- 2tsp
- Black pepper- 1/2 tsp
- All purpose flour- 200gms
- Whole wheat flour- 250gms
- Vital wheat gluten- 3tbsp
- Milk for brushing
- Butter- 2tsp
You can use 450 gm bread flour instead of whole wheat flour, all purpose flour and vital gluten.

Preparation
- Add yeast, warm water and milk in a large bowl.
- Let it rest for 5-10 minutes until it is foamy.
- Add olive oil, dried thyme, dried basil, dried oregano, chilli flakes, salt and black pepper and mix.
- Add all purpose flour, wheat flour and vital gluten (or bread flour).

Preparation
- Mix to make a dough. The dough will be a little sticky.
- Transfer the dough to a lightly floured surface and knead for 10-12 minutes. (This step is very important for the texture of bread, so do not compromise on kneading).
- Lightly oil a bowl and transfer the dough to the bowl.

- Cover the bowl with a damp cloth and keep it in a warm place for 2 hours until the dough doubles in size.
- Oil a 10 inch pan.
- Gently fold the dough and divide it into 13 equal parts.

- Make balls from each part and arrange the balls in the pan keeping little distance between each ball.
- Cover the pan with aluminium foil and let the dough rest for 40 minutes.

- Pre heat the oven to 180 degree C.
- Brush the top of bread gently with milk.

- Bake the bread rolls for 20-25 minutes until it is browned from top and sounds hollow when tapped at the bottom.
- Remove from the oven.

Preparation
- Brush with butter.
- Serve warm.
