Stuffed Potato Pancake Recipe For Kids
Kids are usually the picky eaters. When it comes to breakfast, children always find a a reason to fuss on what mothers have prepared for them. No matter how much you tell your little one that this is good for them, they will find a reason to tell you it is not. Experts say that when you encourage children to eat sweet ingredients in the morning it helps them to build up their stamina.
Most mums, especially the working ones love to fill their kiddies plate with easy foods like cereal and a glass of milk. No doubt, it is healthy, but you should also make it a habit to see that your child eats home cooked meals.
Boldsky, shares with you one of the best and non-time consuming breakfast recipe, dedicated to working mums. This stuffed potato pancake will be loved by your little ones at home. Moreover, the taste of the fresh and soft potato filling will just add more bliss to their day. Take a look as to how to prepare this yummy stuffed potato pancake for breakfast:

Serves: 3
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients
- Wheat flour- 2 cups
- Eggs - 2 (boiled & diced)
- Egg - 1 (raw)
- Onion - 1 raw (finely chopped)
- All purpose flour - 2 cups
- Potatoes - 6 cups (boiled & mashed)
- Salt - 1tbsp
- Olive oil to fry
Procedure
- Finely chop the onion and place it in to a large pan with 2 tbsp oil. On a medium flame, saute till it turns a little golden brown in colour.
- Now add 2 boiled diced eggs along with 2 cups of flour. Mix these ingredients well and remove from the stove. You can add a pinch of salt too if needed. It should be warm, not hot. This is your filling.
- In a mixing bowl combine the 6 cups of mashed potatoes with the one raw egg and mix it well using a flat spoon. Add 2 cups of flour and these ingredients well. Make sure that your mixture does not have lumps of flour.
- With the help of an ice cream scoop get even portions of dough. Scoop out balls of dough and then flatten them into patty like shapes.
- Place 1 tbsp of wheat filling in the center of each patty, now fold the patty to seal the edges with your fingers. Mold the patty into the shape of a pancake. Finally, flatten the sides.
- Now, preheat 1 or 2 drops of oil in the pan and place them on the pan when hot. Cook the stuffed potato pancake until golden brown on each side.
Your stuffed potato pancake recipe is now ready to eat. You can serve it alongside ketchup or chutney.
