'Desi' Pasta: Indian Style Recipe

Pasta is a famous Italian dish that is famous worldwide. Various cuisines have modified the traditional Italian recipe to suit their taste buds. When it comes to India, its cuisine is well known for spices and rich foods. How about mixing Italian pasta with Indian spices? Check out the Italian pasta recipe in our 'Desi', Indian style.
Pasta recipe in Indian 'Desi' style:

Serves: 3-4
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients
- Pasta- 500gms
- Onion-1 (chopped)
- Carrot- 1 (chopped)
- Capsicum- 1 (finely chopped)
- Garlic paste- 1 ½tsp
- Green chillies- 4-5 (slit)
- Tomato puree- 4tbsp
- Chilli sauce- 1tsp
- Red chilli powder- 1tsp
- Amchur powder (dried mango powder)- ½ tsp
- Black pepper powder- 2tsp
- Cumin powder- 1tsp
- Garam masala- ½ tsp
- Salt- as per taste
- Oil- 2tbsp
- Water- 4 cups
For Garnishing:
- Coriander leaves- (finely chopped)
- Grated cheese- ½ cup
Procedure
- Boil water in a deep bottomed pan. When the water starts boiling, add the pasta and a pinch of salt. Mix well and then add few drops of oil. This prevents the pasta from sticking with each other. Cover with a lid and let it boil. Stir at intervals to check if the pasta is cooked or not. When the pasta become soft, strain them and wash with cold water once. Let it cool.
- Heat oil in a skillet. Add garlic paste and green chillies. Mix and then add the vegetables namely onion, carrot and capsicum. Cook on medium flame until the vegetables become tender.
- Sprinkle salt and when the vegetables are little cooked. Add tomato puree, garam masala, cumin powder, red chilli powder, amchur powder, green chillies, black pepper powder and chilli sauce. Mix all the ingredients well and bring to a boil.
- When bubbles start forming on the surface, add the boiled pasta. Mix well so that the masala is absorbed by the pasta pieces. Cook on medium flame for a minute. Take the pan off flame.
Desi style pasta is ready. Garnish with grated cheese and coriander leaves. Serve this Indian style sweet and spicy pasta hot.
