Mixed Vegetable Sandwich
Every morning we try to start our day with healthy food. Most of us either end up having a heavy breakfast with lots of carbs or eat very minimally to keep fats out of our diet. However both the trends are considered to be extremely dangerous and can prove to be harmful for our body in the long run. Yet, some of us try to have a healthy breakfast but make the preparation a very long and tiring affair.
Sandwich is a dish that is mostly eaten for snacks, but at the same time it can be substituted for breakfast. However while planning to have sandwich for breakfast, we need to be extra conscious as lots of cheese goes in for making a tasty sandwich. In order to get the balance between both our diet and intake of cheese, we can make the best use of veggies.
Sandwich prepared with healthy vegetables like onions, capsicum and carrots are no doubt considered to be a healthy breakfast. This recipe is ideal for those who are planning to have a healthy yet low calorie breakfast.

Serves: 4
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Ingredients:
Onion- 1 (chopped)
Capsicum- 1 (chopped with seeds)
Carrot- 1 (grated)
Sweet corn- 1 cup (boiled)
Chilli Powder- 1/2tsp
Pepper powder- 1/2tsp
Cheese 1/2 cup (grated)
Whole Wheat Bread- 8 slices (toasted)
Vegetable Oil- 1tbsp
Low fat butter- 1tbsp
Salt- as per taste
Method:
1. Take a pan, preferably non-stick pan and melt the butter in it.
2. Once the pan is heated, add chopped onion and saute until it turns golden brown
3. Now add chopped capsicum and grated carrots into the pan
4. Add chilli powder, pepper powder and salt.
5. Saute for 3 to 4 minutes until it softens.
6. Cook for 2 minutes and keep aside for 5 minutes to cool.
7. Add the grated cheese and stir well.
8. Spread the vegetable mixture on 4 slices of bread and top it with the other slice of bread.
9. Toast the sandwich either in a toaster or in the pan till it turns brown.
You can have the healthy vegetable sandwich with a glass of orange juice to start your day in a healthy way.
