Ingredients
Mutton - ½ kg (chopped)
To make the paste, you will need:
- Coconut - 3/4 cup (grated)
- Garlic -15 pods
- Cumin seeds - 1 tbsp
- Fennel seeds - 1 tbsp
- Pepper corns- 1 tbsp
- Ginger - 1 tbsp
Other ingredients
- Chilly powder - 1 ½ tbsp
- Turmeric powder - 1 tbsp
- Garam Masala - 1 tbsp
- Curry Leaves - 15 nos
- Oil - 2 tbsp
- Salt to taste
Method
- In a mixer, grind the following spices to make a paste - coconut, garlic, cumin seeds, fennel seeds, pepper corns and ginger.
- Add a little bit of water to the mixture if the paste is to thick. Grind again until the paste becomes smooth in texture.
- In a cooker, add in the clean pieces of mutton and the above paste. Mix these two ingredients over a medium flame.
- Now add in the chilli powder, turmeric and the garam masala powder to the cooker.
- Mix all the ingredients well so that the chopped mutton pieces are covered with the masala.
- Now add in the oil and mix well.
- Add in a cup of water to the mixture and bring it to a boil.
- Now cover the pressure cooker and wait for the steam to come out before you put the stopper.
- Let the mutton cook for about 25 minutes on a low medium flame in the pressure cooker.
- When done, before you serve the Chettinad mutton fry on a plate, garnish it with curry leaves.
