To grill chicken is one of the Sunday jobs that people love but we are not gourmet chefs so there always something missing from our chicken steaks. To go that extra inch and make perfect grills out of chicken you need the advice of an expert and you too can get your chicken steaks just right like the restaurants. Whether you are using a microwave grill or an open one with charcoal is immaterial; you need to know how to use it in the best possible way.

Here are some expert tips on how to grill chicken like a pro.

Steps To Grill Chicken:

1. Choose the chicken pieces carefully. Not all chicken pieces can be grilled. Especially if you are making chicken steaks then you need to choose pieces with maximum meat and minimum fat. Loose skin and extra fat needs to be trimmed before the pieces are mounted on the grill.

2. Cut small but deep incisions into the chicken pieces because the skin is going to block out all the spices you use to marinate the chicken. Before you marinate the chicken you have to rub salt on it so that it does not get lost in the marinade.

3. Rub the marinade generously on the chicken because in a grill it will fall off the pieces as it melts with the heat. If you are going to lose some marinade then better to put some extra instead of adding it later.

4. Your marinade must always contain a sour element like curd, lemon, vinegar or tomatoes. This makes the meat tender and helps it cook faster. When you brush oil then just drizzle it; don't wash off the spices.

5. The grill you are using must be brushed, scrubbed if necessary and then wiped dry before you use. If there are clumps of solid filth on it then the chicken will not be grilled evenly.

6. To grill chicken you need to understand a basic formula. The centre will heat up more than and before the sides of the grill. Also, the bigger pieces will take more time to cook than the smaller ones. So the logical solution is to put the larger chicken steaks at the centre and the smaller ones on the sides of the grill.

7. Microwave grill has but one major difference from the charcoal grill; ie, in the earlier the heat comes from above while a normal grill heat is generated from the coal burning below. So the upper layer of the chicken will be browned first as opposed to the lower layer in the normal grill.

8. Ideally you should be using a food thermometre to check the temperature of the meat but since most of us do not have it, you can stick a knife into the chicken piece and see if any pink remains in the centre.
