Ingredients Of Channer Payesh:

2. Milk-1 litre
3. Condensed milk-1 can
4. Sugar-1 cup
5. Cardamom-4
6. Raisins-10
7. Cashew-10
8. Pistachios-10
9. Ghee
Procedure For Channer Payesh:
- Mince the cottage cheese or channa in a mixer-grinder. Do not make it into a smooth paste; leave it slightly rough.
- Heat ghee in a deep pan and scatter the cardamom over it.
- Heat milk in the same deep pan. As it comes to bubble, pour the can of condensed milk in it and stir to mix as you do so.
- Add the sugar to it after 2 minutes. Make sure the sugar is finely ground. If it is granular it will take more time to dissolve.
- After the milk boils for about 5 minutes add the minced cottage cheese lumps to it.
- Keep stirring continuously as the milk boils for the next 10 to 15 minutes.
- Five minutes before you remove the pan from flame, add the raisins, cashews and pistachios.
- Let it cool for an hour and then refrigerate for another hour.
Enjoy Channer payesh as a chilled dessert after a sumptuous Diwali dinner.
