Fruit Bread
Ingredients:
250gms Flour
1tsp Yeast
2tsp Sugar
¾ Cup of Water(Luke warm)
' tsp Salt
1 tsp Oil
25gms Candy Fruit
Method:
Cream Yeast and Sugar in a mixing bowl. Add half the amount of water and mix well. Mix Flour and Salt in a deep pan. Rub in the fat. Make a well in the center of the Flour.
Pour the yeast mixture into the flour and mix. Mix rest of the Sugar with the remaining water. Pour this also into the Flour. Add Candy Fruits. Knead till soft dough is formed.
Cover with a thick moist cloth and leave to rise till spongy in a warm place (approx. for an hour). Turn out on to a floured board and knead well till the dough leaves the board and the hands come out clean.
Knead well for about 15 to 20 minutes. Form an oblong roll of the dough. Grease and flour loaf tin and place dough in it pressing gently so that it comes up to half the tin.
Be careful to see that the sides of the loaf do not touch the sides of the tin. Allow it to rise for half an hour, or till double the size. When well risen it should spring back when pressed gently.
Place in hot oven (400 deg F) and bake till well browned.
