Pineapple Muffins
In the mood to eat a juicy , sweet poky fruit, then its time for you to get creative and bake some Pine apple Muffins. Pine apple can satisfy a sweet craving like that of any chocolate bar and in addition to that , there a re also a lot of benefits that you can gain when you grab into every bite of this fruit. It is loaded with vitamins and minerals and its nutrients include calcium, potassium, fibre, and vitamin C. It also helps to lower fat and cholesterol.

Lets make a tasty and healthy snack, you will need :-
2 cups flour
1 tsp of Baking powder
1 tsp of Soda bi carbonate
1 ' tsp of Ginger powder
' tsp of Cinnamon powder
' cup of Sugar
1 Egg (whisked)
¾ cup of Milk
1/3 cup of melted Butter
¾ cup of diced Pineapple
' cup of Raisins
¼ cup of chopped Almonds / cashew nuts
¼ tsp of Salt to taste

Here is what you will do :-

  1. Pre heat the oven before you get started to 160 c.
  2. Now line up to 12 muffin tins with the paper cups.
  3. In a deep bowl you will sift together the flour, cinnamon, ginger, baking powder, soda powder.
  4. Take another bowl and add the melted butter, the sugar and the egg and whisk it up together.
  5. Now add the butter mixture, the diced pineapple , the raisins and the nuts to the flour that has been sieved.
  6. Add in the milk slowly to the flour mixture and mix it until the ingredients are combined. Make sure to keep in mind not to over beat the batter.
  7. Now gently spoon the paper cups by filling it to about only ¾. Bake for about 20 to 25 minutes.

Once baked , your muffins are ready to eat. Eat with no worries , as pineapple helps you in so many ways . Keep in mind that the benefits of pineapple can be achieved through eating fresh, canned, or frozen pineapple or by drinking its juice.
