Lemon & Coriander Soup – Tangy Soup Recipe

What more could be better than a tangy soup. Yes, we have a simple, yet yummy soup recipe that will leave your taste buds wanting for more. A tangy lemon and coriander soup. This healthy soup recipe uses simple ingredients that you have at home.
Ingredients for lemon and coriander soup recipe:
- Fresh coriander leaves (finely chopped): 2 tbsps (Reserve the stems)
- Fresh lemon juice: 2-3 tbsps
- Vegetable Stock: 5 cups
- Vegetables such as carrot, cabbage and spring onions: diced (about 1 cup full each)
- Onion, finely chopped – 1
- Garlic, finely sliced – 6 cloves
- Ginger, finely sliced – 1 inch long
- Gram flour – 2 tbsps (optional)
- Freshly ground black pepper
- Olive oil - 2 tablespoons
- Salt to taste
How to prepare lemon and coriander soup?
- Heat oil in a pan and add cook onions till they are soft.
- Next tip in the ginger and garlic and cook again till soft.
- If you wish your soup to be thick, you can add the gram flour and cook till the raw fragrance is gone.
- After frying the flour, add the vegetable stock and the diced vegetables.
- Add pepper and boil again.
- Add the reserved coriander stems and cook again.
- Now strain the broth and keep aside the vegetables.
- Heat the strain soup, along with lemon juice, salt and more pepper if you desire.
- Once it comes to a boil, turn off the heat and garnish with coriander leaves and serve.
Your spicy, tangy lemon and coriander soup is ready to be sipped!
