Palak Pakoras Recipe

Ingredients:
500 gm palak (spinach)
3 medium onions (sliced)
4-5 green chillies (paste)
1 tsp garlic paste
1 tsp garam masala
Salt, red chilli to taste
1 tsp amchoor powder (dry mango)
200 gm besan (gram flour)
500 ml mustard oil/ refined oil
Method:
Wash, clean and cut the palak finely. Sift the besan and add the palak, onion, green chilli paste, garlic paste, garam masala, salt, red chilli and the amchoor powder.
Mix all the ingredients together till the palak leaves a little moisture. After that, you can add a sprinkling of water if the batter is not smooth and wet. If it is smooth, don't add water.
Heat mustard oil to smoking point and let it smoke for 2 min. Turn off the flame and let the oil temperature reduce for 2-3 mins. Turn on the flame and put droplets of batter in the oil careful, such that each droplet does not touch the other.
Fry 5-6 pieces at a time till golden brown and crisp on both the sides. Drain on absorbent paper.
Serve hot with tomato sauce or green chutney.
