Mutton Dumpukht Recipe For Eid

Mutton dumpukht is a special Mughlai recipe which is just perfect for the upcoming festival of Eid. This mutton recipe originated in Awadh and follows the ancient method of cooking the curry over very low heat, sealing the vessel on all the sides. This authentic style of cooking the meat on low heat makes the mutton tender and helps the spices to penetrate into the meat better which in turn increases the flavour of the dish.

Mutton dumpukht is prepared with a blend of some very fragrant spices and herbs. The mutton is first marinated with the spices and curd and then cooked over very low flame for a long time till the mutton turns tender. This spicy and mouthwatering delight is simply hard to resist and looks extremely tempting.

Mutton Dumpukht Recipe For Eid

So, make this festival of Eid special for your family by preparing this lip-smacking mutton dumpukht recipe at home.

Serves: 3-4
Preparation time: 2 hours
Cooking time: 45 minutes

Ingredients

  • Mutton- 1kg
  • Onions- 2 (medium, finely chopped)
  • Garlic- 5-6 cloves (finely chopped)
  • Ginger- 1 inch piece (chopped)
  • Green cardamoms- 3-4
  • Black peppercorns- 6
  • Cloves- 4
  • Cumin seeds- 1tsp
  • Black cardamom- 1
  • Curd- 1 cup
  • Green chillies-4
  • Mint leaves- ½ cup (chopped)
  • Coriander leaves- ½ cup (chopped)
  • Wheat flour- 1 cup
  • Salt- as per taste
  • Oil- 3tbsp
  • Water- 1½ cup

Procedure

  1. Wash the mutton thoroughly with water
  2. Grind mint leaves, coriander leaves, green cardamoms, black cardamom, cloves, cumin seeds, black peppercorns with about two tablespoon of water into a paste in a mixer
  3. Marinate the mutton with this paste, curd and keep it aside for 2 hours
  4. After 2 hours, heat oil in a deep bottomed pan and add onions. Fry for about 5-6 minutes on medium flame
  5. Then add ginger, garlic, green chillies and fry for another 2 minutes
  6. Now add the marinated mutton, sprinkle salt and cook for about 7-8 minutes
  7. When the oil starts separating from the mutton, add one cup of water and mix well
  8. Cover the pan with a lid and reduce the flame
  9. Knead a semi soft dough of the wheat flour with half a cup of water and seal the top of the pan with it
  10. Let it cook on very low flame for about 30-35 minutes
  11. Once done, switch off the flame and keep it covered for about 10 minutes before serving
