Father's Day Special: Kakori Kebab Recipe
Father's day is just round the corner and the best way to surprise your dad this year would be to cook something really special. Talking of special food, you can cook a royal dish for your father.
We are sure you must have heard of the Kakori kebabs. The name Kakori originated from the small town of Uttar Pradesh named Kakori. This place is famous in history because of the great train robbery during the British times. The Kakori kebabs were created in the royal kitchens of the Nawab of Kakori. Syed Mohammed Haider Kazm, the Nawab of Kakori once received a complaint from a British officers about the kebabs being hard. So, he ordered his chefs to create a more tender kebab. Thus, the royal chefs came up with this succulent kebab recipe of Kakori kebab.

The Kakori kebab is a delight for the non vegetarian foodies. It has the melt-in-mouth taste which is the specialty of the Awadhi kebab recipes. So, what are you waiting for? Here is the recipe for the delicious Kakori kebabs.

Ingredients
- Meat mince (mutton/beef kheema)- 1kg
- Unripe papaya paste- 4tbsp
- Salt- as per taste
- Skewers
- Oil- 1tbsp
List A - Kakori Masala (powder)
- Green cardamom- 10 cloves
- Black cardamom- 1 clove
- Cloves- 5
- Nutmeg- a pinch
- Mace- 1 small piece
- Shahi jeera- ½ tsp
- Rose petals- 1tsp
- Kebab chini- 10 pieces
- White pepper powder- 1tsp
- Yellow chilli powder- ½ tsp
- Roasted chana powder- 100gms
List B - Kakori Masala (Paste)
- Dry coconut- 50gms
- Khukhus (poppy seeds)- 1tbsp
- Fried onion- 1 (sliced)
- Khoya- 2tbsp (grated)
- Cashewnuts- 5-6
- Fresh cream- 2tbsp
- Saffron- a pinch
- Rose water- 2tbsp
- Kewda water- 2tbsp
Procedure
1. Grind the meat properly into fine mince. Avoid lumps.
2. Grind all the ingredients into fine powder which are listed under List-A.
3. Grind all the ingredients into fine paste which are listed under List- B.
4. Take the minced meat in a bowl and add both the Kakori masala powder and the Kakori masala paste, papaya paste, salt. Mix it well with your hands.
5. Keep the mixture aside for half an hour.
6. Clean and wipe the skewers properly.
7. After half an hour, take a portion of the mince mixture and put it around the skewers evenly like a seekh kebab.
8. Brush a little oil on it and the roast it on charcoal grill or in your microwave.
9. When the meat gets completely cooked, remove it from the heat.
10. Transfer the kebabs carefully from the skewers to a plate and serve.
Serve these delightful kebabs with green chutney. Kakori kebabs are a great accompaniment with the sheermal flat breads.
