Chicken Tagine: Moroccan Recipe For Sunday
Chicken is one of the most versatile ingredients to cook with. There are so many different recipes that you can try with chicken. There is actually no end to the experimentation that can be done with chicken recipes. When you cook chicken with Indians spices, you get curries and kebabs. When you cook it with European herbs, you get chicken casseroles. And if you want to really try avante-garde, you can try cooking chicken in the Afro-Gulf style as well.
That is why, Boldsky present chicken tagine which basically a Moroccan chicken recipe. Chicken tagine is actually quite famous in all of the Middle East but the recipe originally belongs to Morocco. The speciality of chicken tagine is that it served in earthen crock pot and takes some flavour from it. Apart from that, chicken tagine is a very easy to look chicken casserole that contains olives and lemon.

Preparation time: 20 minutes
Cooking Time: 1 hour
Ingredients
- Chicken breasts- 4
- Chicken broth- 2 cups
- Olives- 10
- Onion 1 (chopped)
- Garlic- 6 cloves (minced)
- Ginger- 1 inch (minced)
- Cinnamon powder- 1tsp
- Lemon rind powder- 1tsp
- Lemon juice- 2tbsp
- Coriander leaves- 2 stalks (chopped)
- Pepper- 1tsp
- Olive oil- 1tbsp
- Salt- as pr taste
Procedure
- Marinate the chicken pieces with lemon juice, salt and pepper. Keep it aside for 30 minutes.
- Then heat olive oil in a deep bottomed pan. After a minute add the chicken pieces.
- Saute the chicken pieces for 3 minutes on each side. Strain them and keep them aside.
- Now add onion and garlic to the pan. Saute for 2 minutes on low flame.
- Then add cinnamon powder, ginger, olives and the chicken broth. Simmer for 5 minutes.
- Then add the chicken pieces. Cover and cook for 45 minutes on low flame.
- Take off the cover and cook another 5 minutes while stirring the broth.
- Now remove the chicken breast from the sauce and place them in tagine bowls.
- Garnish with coriander leaves and lemon rind powder.
- Then spoon the sauce you prepared over the chicken pieces.
Chicken tagine is ready to be served. You can have it with pita bread or kaboos.
