Prawn Curry With Mint

During summers it becomes a great nuisance to decide what to eat and what to avoid. With the rising temperature it becomes very important that you eat food which keeps you and your stomach cool. Therefore, you need to use certain ingredients in your food that are suitable for the season and at the same time does not compromise with the taste.

Mint and coriander are such ingredients for the summers which not only add freshness to your taste but also keeps you cool. Prawn curry with mint is a very fresh combination to try out in the summer season especially if you have guests coming over for dinner. This seafood recipe is prepared with very less spices which makes it even more summer friendly and you will definitely impress your guests as well as your family with this simple and fresh preparation.

Prawn Curry With Mint

So, lets take a look at how to prepare this fresh and tasty prawn curry with mint.

Serves: 3-4

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

  • Tiger Prawns- 200gms (shelled and de-veined)
  • Mint leaves- 1 small bunch
  • Coriander leaves- ½ bunch
  • Garlic- 5 cloves
  • Ginger- 1tbsp (chopped)
  • Green chilly- 1-2
  • Onion- 2 (sliced)
  • Cumin powder- ½ tsp
  • Coriander powder- ½ tsp
  • Coconut milk- 100ml
  • Lemon juice- 2tbsp
  • Salt- as per taste
  • Oil- 2tbsp
  • Water- 1 ½ cups

Procedure:

  1. Wash the prawns properly removing all the dirt and marinate them with lemon juice and salt.
  2. Wash and grind mint and coriander leaves along with green chillies, cumin powder, coriander powder, ginger-garlic and one sliced onion into a smooth paste.
  3. Now heat oil in a pan and add rest of the onion. Fry till the onion turns translucent.
  4. Add the prepared mint-coriander paste and cook for a minute.
  5. Now slowly add the coconut milk and simmer for 5 minutes.
  6. Add the prawns to the mixture and cook for a couple of minutes.
  7. Sprinkle salt and a cup of water on the curry and cook on low flame for 5 minutes.
  8. Check if the prawns are cooked with the help of a fork.
  9. Once done, switch off the flame and garnish the curry with mint leaves. Serve the curry with brown rice or basmati rice.
