Prawn vindaloo makes a perfect maincourse dish for the non-vegetarian sea food lovers. The use of coconut milk in the recipe gives it a soothing flavour and lip-smacking taste. However it is very important to have good balance between the flavour and the spices in this dish. You can adjust the spice according to your preference. Your mom is surely going to enjoy this spicy delight.

From Mom's Kitchen: Prawn Vindaloo

Here goes the recipe for prawn vindaloo.

Serves: 3-4

Preparation time: 15 minutes

Cooking time: 20 minutes

Ingredients

  • Prawns- 500 gms
  • White vinegar- 3tbsp
  • Onion- 1 (chopped)
  • Tomatoes- 3 (peeled and chopped)
  • Ginger- 1inch piece (grated)
  • Garlic- 4 cloves (chopped)
  • Cumin seeds- ½ tsp
  • Dry red chillies- 3
  • Coconut milk- ½ cup
  • Salt- as per taste
  • Oil- 2tbsp
  • Coriander leaves- 2tsp (chopped for garnish)

Procedure

  1. Clean and wash the prawns thoroughly removing the shell and poison vein. Keep it aside.
  2. Soak the cumin, red chillies, ginger and garlic in vinegar for 15 minutes. Then make a smooth paste in a mixer.
  3. Heat oil in a pan and add onions. Fry for 3-4 minutes till they become transparent.
  4. Add the prepared paste and stir fry for about 3 minutes on medium flame.
  5. Now add the tomatoes and cook for another 5 minutes.
  6. Add the prawns and salt. Cook for another 2 minutes.
  7. Now add the coconut milk and let it cook for 8-10 minutes on low flame.
  8. Garnish with coriander leaves and serve it hot with steamed rice.

Prawn vindaloo is ready to be served. Your mom will definitely relish this spicy sea food recipe.
