Malpua Recipe: How To Make Indian Fried Dough
Malpua is a traditional North Indian sweet that is prepared during festivals. It is a deep fried pancake dunked in sugar syrup. Here is a detailed preparation method along with the images and a video.
Malpua is a traditional North Indian sweet that is prepared during the festive season and also during fasts. The sweet is made by frying the khoya and maida batter that is dunked in sugar syrup. This finger-licking sweet is soft yet crunchy on the edges and is to be served hot or warm.
The Indian fried dough is also an integral part of the Rajasthani and Gujarati thali meals. This is a delectable sweet that is easy to make and is the best dessert to impress kids, leaving them wanting for more. It is generally served with rabri, but you can also eat it just like that or have it with ice cream as a variation.

Khoya - 5 tbsp
Milk - 1½ cups
All purpose flour (maida) - 1½ cups
Fennel seeds (saunf) - 3 tsp
Sugar - 2 cups
Water - 1 cup
Ghee - for frying
Chopped almonds - for garnishing

1. Take khoya in a bowl and mash it.
2. Add milk and mix well, so that there are no lumps formed.
3. Add maida and stir again carefully to form a smooth-flowing batter.
4. Add fennel seeds and mix well.
5. Then, pour 2 cups of sugar in a heated pan.
6. Add water immediately and heat it till the sugar dissolves.The sugar syrup must boil and reach a one-string consistency.
7. Meanwhile, heat ghee in a pan for frying.
8. Once it is hot, gently pour the batter into the ghee and spread it into circular flat discs .
9. Flip it over after one side is done.
10. Once it starts to turn golden brown, remove it off the pan and immediately immerse it in the hot sugar syrup.
11. Let it soak for about a minute and then remove it.
12. Garnish it with chopped almonds.
- 1.The batter for the malpua must be of a smooth pouring consistency, after adding the maida.
- 2.If you don't use khoya, you must boil the milk before using it.
- 3.Using oil instead of ghee changes the taste of the sweet and is not advisable.
- 4.The quantity of water added to make the sugar syrup must be just enough to immerse the sugar.
- 5.Serve the malpuas hot or warm. Once it gets cold, it becomes chewy.
