Green Moong Lentil Stew And Bottle Gourd Curry With Finger Millet Bread And Spinach Gallet

Green moong and bottle gourd are commonly found items in our kitchen. Chef Anirudh Nautiyal gives us a very nice and innovative recipe to make the boring moong dal and bottle gourd into a very interesting and delicious dish.

The name of the dish is Green Moong Lentil Stew and Bottle Gourd Curry accompanied by finger millet bread and spinach gallet.

All the ingredients used in this recipe are healthy and tasty enough to make you go gaga over this dish. So, take a look.

Serves: 3

  • For Lentil Stew

    Green moong lentil - 1½ cup

    Asafoetida - 1 tsp

    Salt - 2 tsp

    Cumin seeds - 2 tsp

    Coriander powder - 2 tsp

    Oil - 2 tbsp

    Coriander leaves - to garnish

    Tomato julienne - 3 tsp

    For Bottle Gourd Curry

    Bottle gourd dices - 2 cups

    Salt - 2 tsp

    Turmeric powder - 1 tsp

    Coriander powder - 1 tsp

    For Spinach Gallet

    Grated potato - 1½ cups

    Ginger - 1 tbsp

    Garlic - 1 tbsp

    Spinach paste - ½ cup

    Salt - 2 tsp

    Coriander powder - 1 tbsp

    Cumin powder - 1 tsp

    Turmeric powder - 1 tsp

    Oil - 2 tbsp

    For Finger Millet Bread

    Finger millet flour - 2 cups

    Salt - 2 tsp

    Clarified butter - ½ cup

How to Prepare
  • For Lentil Stew

    1. Take an open utensil, add some water to it and 2. then put it on the gas for a minute or two.

    Now, add lentil to the hot water and boil the lentil with little salt.

    3. Add turmeric to the boiled lentil.

    4. Then, temper it with cumin seeds and asafoetida.

    5. Add seasoning and finish with the julienne of tomatoes and chopped coriander.

    For Bottle Gourd Curry

    1. Take out the bottle gourd dices on a pan.

    2. Cook it with salt.

    3. Add turmeric powder to it and stir the content.

    4. Now, temper it with cumin seeds.

    5. Add seasoning and finish it with chopped coriander.

    For Spinach Gallet

    1. Take a wok and add ginger-garlic paste to it.

    2. Now, add spinach paste and cook it for sometime.

    3. Add all the other ingredients, except the potatoes.

    4. Lastly, add the potatoes.

    5. It's time to let the mixture cool down to make the gallets.

    6. Now, pan sear the gallets and serve along with other dishes.

    For Finger Millet Bread

    1. Take flour in a bowl and add salt to it.

    2. Knead the dough and keep it for resting.

    3. Now make a thin bread of it.

    4. Cook it on a griddle and apply clarified butter to retain its moisture.

    5. Keep it covered for some time.

    Now arrange all the dishes in a platter well and serve hot.
