Dry fruit cake is a yummy treat that is easy to be prepared at home. When you would want to bake something simple and delicious, this special dry fruit cake recipe can be tried.
This eggless dry fruit cake recipe needs no expertise and the choice of dry fruits is totally on the person who is baking this. Here, in our eggless dry fruit cake recipe, we have made use of dry fruits like almonds, walnuts, cashew nuts and raisins.

Almonds - 8
Walnuts - 4
Cashew nuts - 8
Raisins - 8
Maida -1½ cup
Milk powder - 1 cup
Sugar - 1 cup
Fresh cream - 1 cup
Milk - 1 cup
Vanilla essence - 3 to 4 drops
Baking powder - 1 tablespoon
Soda - 1/4th tablespoon
Ghee for greasing

1. Take 8 almonds and grate them coarsely.
2. Take 4 whole walnuts cut into half and grate them as well.
3. Take 8 cashew nuts and grate it.
4. Add all the coarsely grated nuts in a bowl and add the raisins to it.
5. Mix well and keep it aside.
6. Now, add 1½ cups of maida in a large bowl.
7. Add 1 cup of milk powder and 1 cup of sugar to it. Mix well.
8. Now, add the fresh cream and milk to it.
9. Whisk it for 5 minutes until the mixture turns into a thick and smooth consistency.
10. Add the vanilla essence and whisk it again till the batter is smooth and free of lumps.
11. Add all the coarsely grated dry fruits and mix again.
12. Keep it aside.
13. Grease the baking tray with ghee. Keep it aside.
14. Now, add baking powder and soda to the cake mixture.
15. Blend everything well and pour the batter into the greased baking tray.
16. Before baking it, ensure that the oven is pre-heated for 10 minutes.
17. Place the cake mould in the oven and bake it at a temperature of 170 degree Celsius for 45 to 50 minutes.
18. Once done, take out the cake tray from the oven.
19. Remove the cake from the mould and set it aside to cool for 15 minutes.
20. Cut the cake and serve.
- 1. Make sure to use fresh cream or malai. Butter can be used as well.
- 2. We have not used dalda in this cake recipe to avoid the heaviness.
- 3. Ensure to free the batter of lumps.
- 4. The baking tray can be greased with ghee or oil.

STEP BY STEP - HOW TO MAKE EGGLESS DRY FRUIT CAKE
