Tanka torani is an Indian beverage, originating from the Puri district of Odisha. Recently, IMD (Indian Meteorological Department) shared guidelines for the heatwave in India and mentioned that people could drink torani for relief from the heatwave.
It is made from day-old rice, and an array of spices including cumin, coriander seeds, cardamom, and black pepper, mixed with water and jaggery.

The resulting drink is a slightly sweet and spicy concoction, which is believed to have cooling properties that help in keeping the body temperature regulated. It is served either hot or cold depending on the preference of the consumer and is a popular summer drink.
Tanka torani is also believed to have medicinal properties and is often consumed to treat common illnesses such as colds and indigestion.
What Is Tanka Torani?
As prasad, tanka torani is made with one-day-old rice and seasoned with spices. It was traditionally made with roasted cumin, hand-tear lemon leaves, curry leaves, and a little salt if necessary.
Afterwards, green chillies are added to give it a kick. Depending on the sourness of the mixture, curd is also added. The mixture is then kept for 2-3 hours and served cold. It is traditionally made in earthen pots so that it remains cold.

Tanka Toraaṇi is made using the following ingredients:
- Cooked rice
- Curd
- Water
- Ginger
- Mango
- Green chillies
- Salt
- Roasted cumin powder
- Lemon leaves
- Curry leaves
- Basil leaves
- Lemon

Directions
- Combine one-day-old cooked rice with rice water.
- You need to mash the rice and add water and curd until you reach a drink-like consistency.
- Add all the spices and mix thoroughly.
- Keep the mixture for 2-3 hours and then serve cold.
- Traditionally, it is made in earthen pots to maintain its cool temperature.
