In the summer season, you can find a wide variety of vegetables in the market. However, the only problem is, storing vegetables and cooked food for long is a worry as the hot weather spoils it very easily.

Celery
Known as a natural diuretic, celery helps lose excess water weight without causing dehydration. Moreover, celery treats bloating and cleanses the kidneys as well.

Avocado
Although available throughout the year, avocado is another healthy vegetable that must be included in your summer diet. It is rich in healthy fats which makes it heart healthy. Moreover, avocado is also good for the skin.

Eggplant
Eggplant regardless of its colour (purple, black, green or white) is a healthy summer vegetable.

Zucchini
Most commonly available from May till July, the green vegetable is a rich source of Vitamin B complex. It is also rich in potassium, Omega-3 fatty acids, copper, folate, phosphorus etc. Prefer cucumber sized green or yellow coloured zucchini.

Beetroot

Spinach
The green leafy vegetable can be enjoyed in the summer season. Having some salad made with fresh green leafy vegetables will keep you hydrated and also prevent unwanted weight gain.

Shallots
Off all the onions in the family, shallots are very rich in antioxidants. Moreover, they have anti-bacterial, anti-allergic and anti-inflammatory properties which makes it a perfect vegetable for the summer season.
