Sumptuous Litti Chokha Recipe: Bihar Special
Bihar is famous for a lot of things. The rich history and cultural heritage of the place makes it a most sought place by many travellers. The cuisine of the place is also unique in its own way. Biharis are good at turning some of the most bland ingredients into mouthwatering delights.
One of the most famous and loved food from Bihar is the sumptuous litti chokha. A litti is a snack made out of wheat flour and stuffed with sattu which is roasted Bengal gram flour. The sattu is mixed with a blend of spices which make the filling all the more tasty and if you are trying out litti for the first time, then you are definitely in for a delicious surprise.

Litti is usually served with chokha. Chokha is a mix of vegetables which are boiled or roasted. The vegetables are mixed with a few spices which makes you drool over the dish. Litti and chokha when served together make a complete meal which you just cannot miss for anything.

Ingredients
For
the
cover
- Wheat flour- 2 cups
- Ajwain- ½ tsp
- Oil- 2tbsp
- Salt- as per taste
- Ghee- 2tbsp
- Water- 1 cup
- Oil- for deep frying
For Stuffing
- Roasted gram flour (sattu)- 1 cup
- Green chillies- 3 (finely chopped)
- Cumin seeds- ½ tsp
- Ginger- 1 medium piece (grated)
- Garlic- 5 pods (finely chopped)
- Coriander leaves- ½ cup (finely chopped)
- Pickle masala- 1tsp
- Lemon juice- 1tsp
- Ajwain- ½ tsp
- Mustard oil- 2tsp
- Salt- as per taste
For Chokha
- Potatoes- 2 (boiled and peeled)
- Brinjal- 1 (roasted and peeled)
- Tomatoes- 2 (roasted and peeled)
- Onion- 1 (finely chopped)
- Green chillies- 2 (finely chopped)
- Coriander leaves- 2tbsp (chopped)
- Salt- as per taste
- Mustard oil- 1tsp
Procedure
For
Cover
1.
Mix
all
the
ingredients
except
the
oil
for
deep
frying
in
a
bowl.
2.
Add
water
and
knead
a
stiff
dough.
3.
Cover
the
dough
with
a
wet
cloth
and
keep
it
aside.
For
Stuffing
1.
Mix
all
the
ingredients
for
stuffing
in
a
bowl.
2.
Mix
the
ingredients
well
and
make
sure
no
lumps
are
there.
Keep
it
aside.
For
Litti
1.
Take
the
dough
and
make
5-6
balls
out
of
it.
2.
Take
each
ball
and
flatten
it
between
your
palms
and
slowly
make
a
depression
with
your
fingers.
3.
Fill
a
portion
of
the
stuffing
and
close
the
balls
by
lifting
the
sides
by
hand
and
flatten
the
litti
a
bit
by
pressing
your
palm.
4.
Heat
the
oil
for
deep
frying
in
a
pan
and
fry
the
littis
in
it
till
they
turn
golden
brown.
Cook
on
low
flame.
5.
Once
done,
transfer
the
littis
to
a
plate.
For
Chokha
1.
The
brinjal
and
tomatoes
have
to
be
roasted
on
flame
till
they
are
soft
and
cooked.
2.
Then
peel
the
brinjal
and
tomatoes.
Add
the
boiled
potatoes
to
it.
3.
Mix
these
together
in
a
bowl.
4.
Add
in
the
onions,
green
chillies,
coriander
leaves,
salt
and
mustard
oil
to
it.
5.
Mix
well
and
serve
with
littis.
