Phulkapir Dalna
Ingredients:
1 medium sized Cauliflower
2 - 3 Potatoes
500gms Peas
"' Cup Curds
Salt to taste
Oil for deep-frying
4 - 5 Green Chilies
1 Cup Coriander Leaves, Chopped
1" piece Ginger
For the Seasoning :
1tbsp Oil
1tsp Mustard Seeds
1tsp Jeera/ Cumin Seeds
"' tsp Turmeric Powder
"' tsp Asafoetida
Method:
Grind Green Chilies, Ginger and Coriander Leaves to a paste. Cut Cauliflower into florets and Potatoes into cubes. Shell the Peas and blanch them and keep aside.
Heat Oil for deep-frying. Deep fry the florets and the Potato cubes, remove on a kitchen towel. Heat 1tbsp Oil in a kadai and add Mustard Seeds and Cumin Seeds, when they start to splutter add Turmeric Powder, Asafoetida, the Vegetables and the Masala paste.
Stir for 2 to 3 minutes. Add Curds and 3tbsp water and mix well, cook for 2 to 3 minutes and remove to a serving dish. Serve hot with Rice or Roti.
